In those,  dialogue is often triggered by pressing a button near them, and
it's divided into chunks. Like person A may say X the first time, but if you
query the person again (s)he will say Y. An example of what I'm talking marked

Rationale: I added an example of a conversation where the player has multiple options in what they say, which isn't quite the same thing, but should be similar enough. Let me know if you want an example more precisely like what you describe.

Thanks for the example. While it's not precisely what I asked, such situations do occur in the game script I linked. Still, if you can give me an example that's more precisely what I asked, it'd be appreciated, as I'm not that good at figuring these out for myself.

I don't really understand the conversation markup style at the pscave.com URL above. Can you elaborate on it a bit? In particular, under "Pioneer 2 city", the first bit under "Zidd", there are two bullet points. What do they represent?

Each bullet point represents the start of the character's dialogue with your character when you interact with them by pressing the A button. This is because many characters will say something different when you interact with them again.

In the instance you brought up, the dialogue is automatically started after you accept the quest Battle Training. After Zidd is done giving you the mission details, you can interact with him and he will say something different.
