Reformatted (and fixed) understanding documents

Spent some quality time tonight fixing up understanding documents 
(mostly the old 2.0 ones) that used non-semantic lists with 
`<li><strong>...</strong></li>` type constructs instead of definition 
lists, used `<ol>` instead of `<ul>` to list techniques where no order 
is implied/necessary, and fixed the understanding for Reading Order 
where an entire important chunk (the list of the different levels of 
education) was simply missing in action.

This should be purely editorial, but would be good to merge to give 
those old documents (that we're carrying forward) a much-needed bit of 
restructuring.
