Date, time and color input types don't have controls specified. We will need to provide info about making control keyboard friendly, stylable, calendar popup readable to screenreaders, etc. and may need to address in aapi implementation guide.

Form styling in general is unspecified currently, as different UAs may reasonably present a given type of input in different ways.  The UA should be taking care of all of the issues you talk about; if not, they're browser bugs.
